Hello new families! Happy Fourth of July to all of you. Here in the Northeast, the rain never seems to end but we are all hoping the skies will clear by Saturday so the fireworks and festivities can go on.
I'm new to blogging and I don't really know where to begin. I made fish for dinner on Mondayand I have shared my fish recipe three times since then so Idecidedto start my blogging with this simple, fast recipe that would be a great addition to any July 4th menu. It is very low in fat and calories and as delicious as it is easy.
The original recipe comes from Simply Light Cooking. It calls for flounder fillets but I have used basa, tilapia or even cod.
Broiled Fish Filets
Makes four servings
2 Tablespoons Lemon juice
1T plus 1t (4 teaspoons) olive oil
2 fish fillets (1/2 pound each)
2 medium tomatoes, blanched,
peeled, seeded & chopped
4 tablespoons finely chopped fresh
dill or 12 t. dillweed
1. Preheat broiler. Combine lemon juice and oil in small bowl.
Arrange fillets on non-stick baking sheet (or spray sheet with oil).
Brush each fillet with lemon-oil mixture. Broil for 2 minutes.
2. Add tomato and dill to remaining lemon-oil mixture and stir.
Carefully turn fillets over and top each with 1/2 tomato mixture.
Broil 3 to 4 minutes until fish flakes easily with fork.
I think you can easily adapt this to cook on the grill by wrapping the fish and the tomato mixture in foil.
